hana ranch provisions: a slice of heavenly hana in pa‘ia

HANATeamPhoto-August-2015There’s a new kid on the block in free-spirited Pa‘ia Town. In late August, Hana Ranch Provisions opened its doors, offering organic cooking from scratch: sandwiches on house-made bread, fresh-squeezed juices, pastries baked daily, and house-smoked meats and sausages. Provisions also has a to-go counter serving breakfast, pastries, and pantry items.

“Hana Ranch is thrilled to introduce Hana Ranch Provisions, a new community gathering place that, at its core, will strive to provide a wholesome, ingredient-focused food experience,” says Culinary Manager Linh Phu. “We look forward to sharing all of the Hana Ranch grown products and stories through Provisions, where each dish is inspired by our land, history, and culture.”

Hana Ranch is a working cattle ranch on 3,600 acres in East Maui with a diverse business model. Their operations are rooted in the values of land stewardship, collaboration, and community, and their produce is grown organically without the use of harmful synthetic chemicals or genetically modified seeds. Much of the fruits and vegetables used to prepare dishes at Provisions comes directly from the ranch. Additional produce is also sourced from Kula and Ha‘iku.

Susan and I are attending Provisions’ Opening Party. We’re pleasantly surprised by the interior transformation that has taken place in this restaurant space. Sleek, industrial chic tables, chairs, and light fixtures provide a neutral backdrop for showcasing colorful dishes inspired by the bounty of the land. Large photographs depicting scenes of ranch life punctuate cream-colored walls. Up front a display case boasting rows of glass jars containing bright orange, red, and yellow fruits and vegetables provides a whimsical splash of color.

Server Ellie, who holds a degree in sustainable agriculture, does a stellar job of explaining Hana Ranch’s philosophy, as well as the menu at Provisions. Susan and I get off to a tasty start with the Vegetable Pakora ($10.50): deep-fried chunks of broccoli, cauliflower, and okra served with addictive vadouvan spiced yogurt and papaya chutney for delectable dipping.

Next we sample the Butternut Squash Hummus Cucumber Crudité ($9): slices of crisp and juicy cucumber spread with a layer of creamy hummus and topped with crunchy fried chickpeas. A sprinkle of aleppo pepper provides a nice bit of heat to counterbalance the coolness of the cucumber and hummus.

The Roasted Carrot & Kale Salad ($13) is a vibrant, yet earthy dish featuring the two aforementioned stars of the show, plus quinoa, sunflower seeds, and green goddess dressing. It’s a pleasurable combination of flavors and textures. The Seared Green Beans ($7.50) are as delightful as their tantalizing aroma: the freshest of green beans are sautéed with pickled shallots and whole-grain mustard. The result is a depth of flavor as rewarding as the aroma.

It’s time to bring on the beef! Ranch-raised beef, of course. The Hana Burger ($15) is oozing with melted cheese, caramelized onions, and horseradish aioli. It’s served on a house-made ‘ulu (breadfruit) bun and accompanied by a heap of tasty fries.

For dessert, we savor the Dark Chocolate Tart—a decadent wedge of chocolate goodness surrounded by a flaky crust, served alongside a quenelle of whipped caramel cream, and dusted with powdered chocolate and Hawaiian sea salt.
